Black pepper chicken

Black pepper chicken is a very aromatic and delightful dish for all the foodies. This is a twist to the usual recipe of chicken karahi and cooked in almost the same way.  This is cooked with almost no vegetables and the taste gets totally enhanced by the use of spices. This recipe is very delicious yet very easy to cook.

Karahi is cooked in various ways in the Indo-Pak subcontinent. It is a dish which has passed down generation to generation. It is known for getting cooked very quickly and easily but also being quite flavourful at the same time. It tastes milder because of the use of black peppers instead of red chilli. It is usually enjoyed with naan and raita.

 

Ingredients:

  • Oil                                              4-5 tablespoon
  • Chicken                                     ½ kilogram
  • Garlic paste                              1 teaspoon
  • Ginger paste                            1 teaspoon
  • Black pepper crushed            1 teaspoon
  • Black pepper whole               6-8
  • Cinnamon stick                       1
  • Coriander whole                     1 teaspoon
  • Cumin seeds                            ½ teaspoon
  • Garam masala powder          ¼ teaspoon
  • Green cardamoms                 3
  • Mace (javitri)                          1 piece
  • Salt                                           1 teaspoon
  • Yoghurt                                    ½ cup

 

Directions

 

Step 1:

In a cooking pot add four to five tablespoons of cooking oil. Once the oil has heated up, add the chicken and fry for two minutes. Cover the pot with a lid and let it cook for five minutes, approximately. 

 

Step 2:

When the water produced by the chicken has dried up, add the ginger and garlic paste. Sauté it until the ginger and garlic paste starts changing colour. 

 

Step 3:

Once the garlic and ginger pastes have changed colour, add crushed black pepper, whole black pepper, cinnamon stick, whole coriander, cumin seeds, garam masala powder, green cardamoms, mace and salt to the cooking chicken. Cook the chicken while constantly stirring so it does not stick to the pot.

 

Step 4:

When the spices start giving off their aromas, pour in the yoghurt. Stir it lightly. Cover the pot with lid and turn the flame to low. Let it cook for ten to 15 minutes or until the chicken turns tender and the yoghurt dries up. Turn off the flame and dish out the black pepper chicken. Garnish and serve.
